Eggplant anybody?

We can't get enough of this vegetable so far this year, and not just for its taste, but for how wonderful it is as a companion plant in the garden! While there are very few plants it doesn't pair well with, it helps ground veggies like kale and lettuce and even catnip.⁠

We can't decide if we want to grow just one or two varieties of Eggplant this year! What about you?
